What is BS 6173:2020 about?

This British Standard covers the safe installation, servicing and maintenance of new and previously-used gas-fired commercial catering appliances that burn 2nd or 3rd family gases (i.e. natural gas and LPG respectively).

BS 6173:2020 applies to commercial cookers, fish and chip frying ranges, fryers, ovens, café boilers and urns, bain-marie units, tandoori ovens, kebab grills and barbecues, and domestic cookers when used in a commercial catering setting (as opposed to primarily domestic premises supplying a small number of clients on a “B&B” basis).

Why should you use BS 6173:2020?

This standard should be adopted because since 2009 some catering establishments have been closed unnecessarily due to equipment failing tests that were not of themselves accurate. By implementing the methodology within BS 6173:2020, these establishments would not now be closed due to the improved accuracy of the newly cited test procedures.

It’s therefore important that test houses purchase this standard to implement these changes in monitoring and equipment testing as it will enable more commercial kitchens to remain open. As well as continuity improvements from the use of current appliances, there will be financial savings for catering establishments all over the UK who use these testing systems.

NOTE: BS 6273:2020 doesn’t apply to LPG catering installations in mobile catering vehicles (see UKLPG CoP 24, Parts 3 and 4 [N3, N4].

What’s new about BS 6173:2020?

This revision introduces a type of constant appliance monitoring that will make commercial kitchen installations significantly safer.
